Las Ranas comes from JASAL’s carefully managed farm in Apaneca’s volcanic highlands, where meticulous attention to cultivation and processing brings out complex sweetness without harsh edges. The name refers to the frog-filled lagoon (“Las Ranas”) near the farm — a nod to place and tradition.

This coffee is honey-processed, meaning cherry mucilage is left on the bean during drying for enhanced sweetness and body.

Your coffee is roasted to order and shipped within 24 hours of roasting. We never roast in advance or keep inventory sitting on shelves. This means your coffee arrives at peak freshness, typically 2-5 days from roasting depending on your location. For the best flavor experience, we recommend using your coffee within 2-4 weeks of the roast date.

Should I order whole beans or ground coffee?

We recommend ordering whole beans for maximum freshness and flavor, as coffee begins to lose its optimal taste within minutes of grinding. However, we're happy to grind your coffee to order for your preferred brewing method. Just select your grind size at checkout:

El Salvador | Las Ranas

A blast from the past! A great year for Cerro Las Ranas. Years ago we found this coffee and fell in love, it was really cutting edge with its honey processing, an early adapter on what is now one of coffees hottest trends.

Cerro Las Ranas (the Hill of Frogs) coffee is named after the farm’s lagoon that is populated by thousands of frogs located in Apaneca within the department of Ahuachapan, El Salvador.

The coffee is produced by JASAL, a family owned operation where Jose Antonio Salaverria and his sons take great pride in their meticulous attention to detail, from year-round farm management to quality control in the cupping lab, and everything in between. In the pulped natural process (also called a honey process), Jose pulps perfectly ripened cherries and then dries the coffee beans, still covered in mucilage, on clay patios while constantly turning the beans to ensure even drying. This process provides a more consistent product than a full natural while still bringing some of the great attributes of a natural processed to the cup profile.
